At 25, Spencer opened the first location of Melt Shop in and quickly gained a large and loyal following. This past October, he expanded the brand in opening a second, larger location in Manhattan’s NoMad neighborhood, offering the gourmet grilled cheese, tater tots, and breakfast melts the restaurant is known for, but with beer straight from fellow food entrepreneur friends at Montauk Brewing Co. Spencer is currently aiming to expand the Melt Shop brand and its elevated comfort food throughout the city and beyond, while also building a community of young, equally ambitious food world entrepreneurs to forge a new generation of food artisans and businesses.
