Ingredients (serves 2): 1 lb slab fresh halibut
1 bunch asparagus
1 tbsp grated ginger
1 tbsp honey
1 jalapeno or Serrano chili
1 tbsp olive oil
1 lemon wedge
1) Remove the chili seeds and veins, and then finely dice. Mix together into a marinade with the grated ginger and honey. Slather it all over the fish and refrigerate for at least 30 minutes.
2) Rinse the asparagus and cut off the bottom 1/3. Smother in olive oil and salt.
3) Heat up the grill. Throw the fish on grill and cook through so the meat turns from pink to white (20-40 min depending on thickness), flipping once.
4) After you flip the halibut, throw on the asparagus and cook together. When the asparagus blacken and wilt slightly, remove from heat. Lay out the goods artfully on plates. Squeeze lemon juice over and garnish the halibut with thin slices of avocado before serving.
