Preheat oven to 350 degrees. Cook chicken in a baking dish with olive oil drizzled on top and salt and pepper to taste for 30 minutes or until fully cooked.
Mix yogurt, mayonnaise, lemon juice and mustard until combined.
Dice cooled chicken and add to mayonnaise mixture. Add remaining ingredients. Toss until evenly coated.
