This recipe uses dried currants, but any dried fruit will taste great here. Just make sure larger fruits are chopped into raisin-size pieces.
Couscous with Currants and Almonds
1 cup low-sodium chicken broth
1 cup couscous
1/4 cup currants
1/4 cup toasted slivered almonds
Pinch of kosher salt and freshly ground pepper
1.) In small saucepan, bring broth to a boil over high heat.
2.) Stir in couscous. 3.) Add currants and almonds. 4.) Remove from hear, cover, and allow to stand for 5 minutes. 5.) Fluff with a fork, then season to taste with salt and pepper.
