Each day, we'll deliver a series of low-calorie, muscle-building, athlete-caliber recipes designed by world-class chefs, like Mario Batali, Candice Kumai, Marc Forgione, Bill Telepan, Ali Maffucci, and Roble Ali.

Steel-Cut Oatmeal with Greek Yogurt, Apples & Dried Cranberries

Ingredients:

  • 1 cup steel-cut oatmeal
  • 4 1/2 cups water
  • 1 cinnamon stick
  • 1 pinch salt
  • 1/2 cup low-fat Greek yogurt
  • 1 tbsp honey
  • 1/4 cup dried cranberries
  • 1/2 apple, cut into small pieces
  • Ground cinnamon to finish

Directions:

  1. Add the water, salt and cinnamon stick in a medium sized pot and bring to a boil.  Pour in the oatmeal and stir for about 2 minutes until it begins to thicken up.  Reduce the heat to low and allow oatmeal to simmer for 30-40 minutes, or until tender, stirring occasionally.  Add in a little water if oatmeal gets too dry while cooking.
  2. While oatmeal is cooking, mix the honey into the Greek yogurt and refrigerate until ready to use. Cut the apple into small pieces, making sure to remove all seeds and core.  Cut the apple as close to serving as possible to avoid browning. When the oatmeal is finished cooking, divide into four bowls and top with the yogurt.  Sprinkle on the apples, dried cranberries and finish with ground cinnamon.
