The glaze on this salmon will have your tastebuds tingling, not to mention you'll be fueling your body with a healthy dose of protein and omega-3.

Preheat oven to 400° F.
In a small bowl whisk together the preserves, olive oil, and lime juice.
Sprinkle salmon with salt and place on a baking sheet skin side down. Top with half of the peach mixture and the lay a few slices of jalapeño across the top. Bake for about 5 minutes per half-inch of thickness. Half way through, brush with the remaining glaze.
