Sneak More Veggies Into Your Diet

Try this easy roasted root vegetables recipe for a hearty side that will satisfy seasonal comfort-food cravings.

Roasted Root Vegetables

  • 2 lb red potatoes, sliced
  • ½ lb parsnips, sliced
  • 1 lb carrots, sliced
  • 2 cloves garlic, minced
  • 2 tbsp fresh thyme
  • 2 tsp honey
  • 2 tbsp olive oil
  • ¼ tsp sea salt
  1. Place all ingredients on a baking sheet, toss to coat, and pop in a 375°F oven.
  2. Remove after 30 minutes, carefully toss vegetables with a spatula, and put back in the oven.
  3. Roast for 25-30 minutes.
