Avocado toast isn't just the trendiest food on your Instagram feed—it's also packed with protein and good-for-you fats. This version is sure to give you an extra boost of energy with an extra boost of protein thanks to the addition of white beans.

Ingredients 
2 slices Ezekiel bread, toasted
3/4 cup cooked white beans, drained and rinsed (cannellini, white kidney, and great northern work best)
1/3 avocado
8 grape tomatoes, sliced
1 Tbsp fresh lemon juice
1/3 scallion, chopped finely
1 small handful fresh cilantro, chopped
1/4 tsp garlic powder
Sea salt, to taste
Cayenne powder, to taste
How to make it 

Add white beans into a medium-size mixing bowl. Using a potato masher, mash until almost completely creamy.

Add avocado, and mash.

Stir in garlic powder, lemon juice, sea salt, and cayenne. In a separate bowl, combine tomatoes, cilantro, and scallions.

Top toasted bread generously with bean and avocado mix, then with the sliced tomato mix to create two open-faced sandwiches.
