Couscous with Currants & Almonds

Add this healthy dish to your next meal

This recipe uses dried currants, but any dried fruit will taste great here. Just make sure larger fruits are chopped into raisin-size pieces.

Couscous with Currants and Almonds
1 cup low-sodium chicken broth
1 cup couscous
1/4 cup currants
1/4 cup toasted slivered almonds
Pinch of kosher salt and freshly ground pepper

Make It
1.) In small saucepan, bring broth to a boil over high heat.

2.) Stir in couscous.

3.) Add currants and almonds.

4.) Remove from hear, cover, and allow to stand for 5 minutes.

5.) Fluff with a fork, then season to taste with salt and pepper.
