Bartenders at the resort serve more than 21,000 rum cocktails each week—that’s over 1.1 million rum drinks (and 68,000 bottles of rum) guzzled annually. In other words, if Cartwright and his team don’t know how to make rum taste good, nobody does. We asked the king of piña coladas for his three essential rules for making a drink that truly shines, plus a few of his favorite recipes.
