2 tablespoons red wine vinegar
1 teaspoon honey
1⁄8 teaspoon ground black pepper
1/4 teaspoon salt 1 teaspoon chopped shallot
1 large Roma tomato, cut into eighths
1/3 cup olive oil

1. Place all ingredients into the Vitamix 20-ounce container in the order listed and secure blade.
2. Turn the dial to 1 and slowly increase speed to 10.
3. Blend for 35 seconds or until desired consistency is reached.
