WHY THE BAD REP? Broccoli is a cruciferous vegetable—it contains sulfur. Cook it too long and you release the gas. That's why broccoli can smell and is hard to cook right.
THE FIX Trim away all the extraneous stalk, so each bunch is about the same diameter from tip to stem. Then, cook until just tender. Drop it into already boiling, salted water and then let simmer for five to seven minutes at most.
