Sure, pretty much all vegetables are exemplary when it comes to their health profile. But some stand out among the rest. Here are the superstars, why they’re good for you, and how to incorporate more into your diet.
What you need to eat: Chinese cabbage, broccoli, brussels sprouts, kale, collards
Why you need to eat them: If anything deserves the term superfoods, it’s cruciferous vegetables. They’re packed with vitamins, minerals, antioxidants, fiber, and sulfuric compounds called glucosinolates, which have shown promise in reducing lung and colorectal cancer risk. They can be eaten raw or cooked; try using Chinese cabbage (aka napa cabbage and bok choy) or brussels sprouts in place of regular cabbage in coleslaw.
Why you need to eat it: Onions have more antioxidants than other veggies, mostly in the outer layers, so peel off only the papery coating and sauté or roast whole at 400° for 1 hour to eat in place of a baked potato.
