The Other Mushrooms

There’s more to this nutrient-rich fungi than button mushrooms.

Shaped like a wily bouquet of flowers, these yellow-brown mushrooms have a distinct aroma and flavor and are often called the “hen of the woods” for their woodiness. Sauté maitakes in olive, pumpkin, canola or your oil of choice and serve over whole grain rice, or add as a side dish or drop some pieces in soup. Sometimes prepared as a tea, maitake is great paired with chicken or in sauces.
