There’s more to this nutrient-rich fungi than button mushrooms.

There are thousands of wild mushrooms, but unfortunately we can’t eat them all. Look for these more fragrant and rich (and non-poisonous versions) at your local market. Morels (1), chanterelles (2), porcinis (3), truffles (4) or black trumpets (5)—wild mushrooms have big range and can work with breakfast, lunch and dinner. Mix into a morning scramble of egg whites, or add to soups, salads or main courses.
