Couscous with Currants & Almonds

This recipe uses dried currants, but any dried fruit will taste great here. Just make sure larger fruits are chopped into raisin-size pieces.


  • 1 cup low-sodium chicken broth
  • 1 cup couscous
  • 1/4 cup currants
  • 1/4 cup toasted slivered almonds
  • Pinch of kosher salt and freshly ground pepper


  1. <p>Stir in couscous.</p>
  2. <p>In small saucepan, bring broth to a boil over high heat.</p>
  3. <p>Add currants and almonds.</p>
  4. <p>Remove from hear, cover, and allow to stand for 5 minutes.</p>
  5. <p>Fluff with a fork, then season to taste with salt and pepper.</p>
