2 oz cheese, cut into 3-by-4-inch piece
2 slices high-fiber white or whole-wheat bread
1 egg
1/8 cup milk
1/4 tsp thyme
1/4 tsp salt
Dash nutmeg (optional)
2 tbsp extra-virgin olive oil

To make: [1] Place the cheese between bread slices to form a sandwich. [2] In a wide, shallow bowl, whisk the egg, milk, and spices until well blended. [3] In a nonstick saute pan, heat the olive oil over medium-high heat until it begins to smoke. [4] Dip the sandwich into the egg mixture, turning it to coat both sides. [5] Place the sandwich in the pan and cook until golden brown on the first side, about 2 minutes. Flip over and brown on the other side. [6] Cut in half, and serve. Pair the sandwich with a Granny Smith apple that's been sliced and topped with a bit of cinnamon and sugar (or artificial sweetener).

George's Tip: The whole point of this recipe is that it lets you eat great, warm, gooey cheese-so make sure whatever cheese you use is high quality. Regular cheddar or American cheese is fine, but for real indulgence, try making the sandwich with an imported mozzarella or Taleggio, a soft, mild-tasting Italian cheese. (You'll never go back to cheese in a wrapper!)
